Unfortunately, my laziness meant we have two bins of what had been fresh veggies at the beginning of the week looking sad and pushing their use-by-date. Le sigh.
I had celery, green and red bell pepper, yellow cooking onions, carrots (lots of carrots), garlic, mushrooms and a skinless, boneless chicken breast. And I had a jar of Patak's Tikka Masala curry (tomato, lemon, cilantro, spices) in the cupboard. And my fav rice: Basmati.
While I prepared the rice, I diced all the veggies and got the EVOO smokin'. I cut the chicken into bite sizes pieces.
I stir fried the veggies first, with sea salt, cracked pepper, and ground garlic to al dente, removed to a plate, then stir fried the chicken. When the chicken was cooked through, I added the veggies and the sauce, simmered for 10 minutes.
